VANILLA ALMOND OVERNIGHT QUINOA

Ingredients
1 cup Almond milk
1/2 cup cooked quinoa
4 tbsp chia seeds
2 tbsp maple syrup
1/4 tsp vanilla extract
chopped almonds to garnish

Method
Divide all ingredients between 2 mason jars. Stir until incorporated.
Place in fridge and let it sit overnight.
Remove and garnish with chopped almonds. Enjoy..

MEXICAN QUINOA

Wonderfully light, healthy and nutirious. And its so easy to make - even quinoa is cooked right in the pan.



Ingredients

1 cup quinoa
1 cup vegetable broth or water
1 can blach beans , drained and rinsed
1 can diced tomatoes
1 cup corn kernels
1 tsp chilli powder
a tsp cumin powder
salt and pepper as per taste
2 cloves garlic
1 tbsp olive oil
1 avocado , halved, seeded and diced
juice of 1 lime
2 tbsp fresh cilantro


Method

Heat olive oil in a large skillet over medium heat. Add garlic, jalapeno and cook for 1 minute.
Stir in quinoa, broth, beand and tomatoes, corn , chili powder, cumin powder, salt and pepper. 
Bring it to a boil, cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes. 
Stir in avocado, lime juice and cilantro.
Serve immediately.

QUINOA CHILLI

This chilli is hearty and very
very filling. The beans and quinoa team up to make this chili a protein power house! I love the texture the quinoa adds to the chili. It is my new favourite chili recipe.We enjoyed leftovers for a few days . And if you cant eat it all, put the chili in the freezer , it freezes really well.



Ingredients

1/2 cup Quinoa , rinsed
1 cup water
1 small onion finely chopped
3 cloves garlic , finely chopped
1 jalapeno , chopped
1 large carrot , peeled and chopped
1 zucchini chopped
1 can red kidney beans, drained and rinsed
1 can tomato sauce
2-3 tbsp chili powder, depending on your taste
1 tbsp cumin powder
salt to taste
1 tbsp olive oil

Method

In a medium pan, combine quinoa and water, Cook over medium heat until water is absorbed , about 15 minutes. Set aside.
In a large pot, heat olive oil over high heat. Add chopped onions and garlic. saute, add jalapeno, carrot and zucchini pieces. Cook until vegetables are tender about 10 minutes.
Add kidney beans and tomato sauce. Stir in the cooked quinoa , Add chili powder, cumin powder, salt. 
Simmer chili on low on low for 10-15 minutes, serve warm

Note - Garnish the chili with green onions, avacado slices, cheese, sour cream if desired.

EGG FRIED QUINOA



If you love egg fried rice and you're a fan of quinoa, then you'll love this recipe! I decided to substitute the rice for quinoa to make a high protein, low carb post workout meal.


 


Ingredients

1 cup cooked quinoa
1-2 eggs
1 red capsicum finely chopped 
1 orange capsicum finely chopped
1 tbsp soya sauce
1 tbsp Sriracha chilli sauce
Pepper as per taste 
1 spring onion finely chopped
1 tbsp olive oil
 

Method

Heat a nonstick pan, add 1tsp oil, after it becomes hot crack the eggs and scramble it. 
After egg gets cooked , transfer it to a plate.
Add remaining oil and add chopped capsicums, sauté it .
Add the soya sauce and chilli sauce and cooked quinoa. Mix well on low flame. 
Add crushed pepper and scrambled eggs and mix well.
You can add soya sauce n chilli sauce according to your taste .
Last but not the least add chopped spring onions.

    QUINOA SALAD WITH BLACK BEANS




    Ingredients

    1 1/2 cups Quinoa cooked
    1/2 cup cooked black beans, rinsed if canned 
    1 tomato chopped 
    1/4 cup finely chopped coriander leaves
    Salt as per taste
    Pepper as per taste
    For dressing
    2 limes , or to taste
    1 tsp salt
    2 tsp cumin powder
    1/2tsp pepper flakes
    1/4 cup olive oil
      

    Method

    Cook quinoa as per instructions ( you can check the cooking method in this blog) 
    In a big bowl toss cooked quinoa, black beans , tomatoes. 
    Make dressing:
    In a small bowl whisk together lime juice, salt, and cumin , pepper flakes and add oil in a stream, whisking.

    Drizzle dressing over salad and toss well with salt and pepper to taste.
    Salad may be made 1 day ahead and chilled, covered.
    Bring salad to room temperature before serving.

    QUINOA SALAD

    Ingredients

    1/2 cup quinoa cooked
    1 tbsp lemon juice
    1 garlic finely chopped
    2 tbsp olive oil
    salt as per taste
    pepper as per taste
    cucumber finely chopped
    1-2 tomatoes finely chopped
    mint leaves
    2-3 spring onions finely chopped

    Method
    Take a bowl , add lemon juice , garlic and olive oil. Whisk well and put salt and pepper.
    Take a big bowl, add cooked quinoa ,cucumber, tomato, mint and spring onions.
    Pour the above dressing and mix it well.
    Salad is ready .

    QUINOA


    Quinoa is actually a seed, but can be prepared like whole grains such as rice .
    There are two alternative ways of pronouncing "quinoa": The first option is "kee-NO-wah" and the other is "KEEN-wah.
    Quinoa is my favorite whole grain for three reasons: First, it takes less time to cook than other whole grains – just 10 to 15 minutes. Second, quinoa tastes great on its own, add a bit of olive oil, sea salt and lemon juice and - yum! Finally, of all the whole grains, quinoa has the highest protein content, so it's perfect for vegetarians and vegans.

     Cooking quinoa:
    Prepare quinoa as you would prepare rice. Place 1 part quinoa to 2 parts water  or vegetable broth and boil until soft, about 15 minutes.

     Nutritional content of quinoa:
    According to CalorieCount, 1/3 cup of cooked quinoa has 160 calories, 2.5 grams of fat, 3 grams of fiber and 6 grams of protein.
