AVOCADO EGG & TOMATO WRAP

Ingredients

1 tortilla
1/2 avocado sliced
1 hard boiled egg sliced
2 sliced tomato
1/4 cup shredded lettuce
Mustard sauce as per your taste
Sriracha or tomato sauce as per your taste

Method

Warm the tortilla for few secs in a pan.
Place the tortilla on a flat surface, arrange the avocado slices, egg, tomato, and lettuce on it alongwith the sauces and roll it into a wrap.
Enjoy this wrap alongwith with a side of soup.

EGG CURRY

Ingredients

8 nos eggs
1 onion finely chopped
2 nos tomato chopped or1 tbsp tomato puree
4 nos green chilli slit
1 tsp ginger garlic paste
1 tsp garam masala
1/2 tsp turmeric powder
1/2 tsp crushed black pepper
2 tbsp coconut milk
salt as per taste
1 tbsp coconut oil
1 tsp mustard seeds
8-10 curry leaves

Method
Hard boil the eggs, remove shell and keep aside.
In a heavy bottomed pan, heat the oil and add the mustard seeds. Once they splutter, add the curry leaves.
Add the chopped onions, ginger garlic paste and the green chillies. Saute well for a couple of minutes till the onions turn slight golden brown in colour.
Add turmeric powder, garam masala powder , saute till raw smell disappear..
Now add the tomatoes or tomato puree , saute for few minutes.
Add the salt and crushed black pepper and stir well.
Lower the heat and add coconut milk. Once it starts to simmer, add the eggs to the curry. If you want you can make small slits in the eggs or cut them in half before you add them.
Remove from heat and serve hot.

EGG FRIED QUINOA



If you love egg fried rice and you're a fan of quinoa, then you'll love this recipe! I decided to substitute the rice for quinoa to make a high protein, low carb post workout meal.


 


Ingredients

1 cup cooked quinoa
1-2 eggs
1 red capsicum finely chopped 
1 orange capsicum finely chopped
1 tbsp soya sauce
1 tbsp Sriracha chilli sauce
Pepper as per taste 
1 spring onion finely chopped
1 tbsp olive oil
 

Method

Heat a nonstick pan, add 1tsp oil, after it becomes hot crack the eggs and scramble it. 
After egg gets cooked , transfer it to a plate.
Add remaining oil and add chopped capsicums, sauté it .
Add the soya sauce and chilli sauce and cooked quinoa. Mix well on low flame. 
Add crushed pepper and scrambled eggs and mix well.
You can add soya sauce n chilli sauce according to your taste .
Last but not the least add chopped spring onions.

    EGG ROAST


    Ingredients

    6 hard boiled  eggs peeled
    2 onions finely sliced
     2 tomatoes finely sliced
    1/2 inch  Ginger chopped finely
    2 tsp chilli powder
     1 1/2 tsp coriander powder
    2 tsp fennel seed powder
    1-2 tbsp olive oil
    salt as needed

    Method
    Heat oil in a nonstick frying pan.
    Now add sliced onions and chopped ginger, saute it till onions become soft.
    Add sliced tomatoes and cook until tomatoes are mushy.
    Now add chilli powder , coriander powder, fennel seed powder .
    Mix it well so that the spices blend with the onion tomato mixture.
    You can add 1 tbsp water and stir it well
    Now slice the boiled egg into half and place the egg (with cut portion faced down) in the pan.
    Coat the onion masala on the top of egg and lower the flame.
    Cover it with a lid and cook for 10 mins.
    Switch off heat and serve with chapati or rice.

    EGG VINDALOO



    Ingredients      
    6 eggs
    5 dry chilli
    4-5 cloves garlic
    1 small piece of ginger chopped
    1 tsp cumin
    2 tbsp vinegar
    1 onion finely chopped
    salt
    1 tsp olive oil       
    1 tsp garam masala
    pinch sugar
    1 tsp cinnamon powder

    Method
    Boil eggs and keep aside .
    In a blender blend red chilli, ginger, garlic, cumin, 1 tbsp vinegar and salt.
    Heat a frying pan. Pour olive oil, add onions and above ground paste . Saute it 5 mins .
    Add cinnamon powder, sugar, vinegar and garam masala,
    Add boiled eggs and cook for 5-10 mins on low flame.
