SHRIMP AND RICE


Ingredients
1 cup brown rice cooked
1 tbsp olive oil
1 egg
1 cup button mushrooms
1/2 cup onion chopped
10 large shrimp  peeled and deveined
1 tbsp ginger minced
1 cloves sliced garlic
1 cup snow peas chopped
1 red pepper thinly sliced
2 tbsp soya sauce
1 green onion chopped finely
1 tbsp sriracha sauce

Method
Heat a non stick frying pan. Add 1 tsp oil , add egg and scramble it .
Remove egg from pan. Add 1tsp olive oil, add shrimp and cook for 2 mins or until done.
Add 1 tsp oil, add mushrooms, onion, ginger, garlic, fry for 2 mins.
Stir in snow peas and bell pepper , cook for 2 mins. 
Add scrambled egg , shrimp and brown rice . Stir in soya sauce, sriracha sauce. Add green onions for garnish.

TAVA PULOA



Ingredients
1 cup cooked Basmati Rice
1 tsp butter
1 ts cumin
1 ts fennel
1 onion finely chopped
1 ts ginger garlic paste
1 ts chilli powder
1 tomato finely chopped
1/2 bell pepper finely chopped
pinch haldi
2 ts pav bhaji masla
cilantro
salt per taste

Method
Take a kadhai , put 1 tsp butter, add cumin, fennel saute it. Then add onions, ginger garlic paste. chilli powder, tomato, bell pepper, cook . Add haldi, Everest pav bhaji masala, mix thoroughly. Now add cooked rice and cilantro , cook for 5 mins.

BAINGAN BHARTHA

Baingan Bhartha

1 big baingan
2 onions finely chopped
1 tbs cumin
2ts ginger paste
2 ts garlic paste
2-3 tbs tomato puree
1tbs dhania powder
1 tsp chili powder
2 tsp garam masala
salt

Make slits in brinjal with knife. Microwave baingan for 5 mins ( till baingan turns soft), let it stand for some time. Remove it and mash the baingan with skin on it.
Take a kadhai , pour some oil, add  cumin , let it splutter . Add onions sautĂ© till soft, then add ginger garlic paste, fry it. Add tomato puree, dhania, chilli  powder (you can add more chilli powder if want too spicy) garam masala, add baingan .
 Then add 1 cup of water , put coriander leaves. Lower the flame and boil for 20 mins . Add lemon juice at the end.

VEG KURMA



Ingredients
2 cloves
1/2 inch cinnamon
1 elaichi
2 cashews
2 tsp poppy seeds
2 tbsp chana daal roasted
1 green chilli
5 tbsp coconut
1 onion finely chopped
1 bayleaf
3-4 curry leaf
1 tsp cumin
1 tsp fennel
2 green chilli slit in half
2 tsp gingergarlic paster
vegetables like carrot, potato, peas, flower, beans
2 tsp coriander powder
2 tbsp curd
salt
2 tbsp milk
coriander leaf

Method
Grind cloves, cinnamon, elaichi, cashews, poppy seed, chana daal, green chilli, and cococnut to a fine paste.
Heat oil in a frying pan, add bayleaf, curry leaf, cumin, fennel, let it splutter.
Add onions, green chillies, ginger garlic paste. Fry till onion is light brown.
Add vegetables, saute it 2-3 mins. Add coriander powder, saute . Now add water and cook till half cooked.
Add curd, add ground coconut mixture and salt. Boil till done. Add 2 tbsp milk and coriander leaves , boil 2 more mins.

VEG MANCHURIAN


Ingredients
1 cup shredded cabbage
1 cup shredded carrot
1 cup flour
salt
oil for frying
2-3 tbsp. ginger garlic paste
3-4 green chillies
1 onion finely chopped
1 tsp pepper
2-3 tbsp soya sauce
2-3 tbsp cornflour
2 tbsp  spring onions finely chopped

Method
Take a bowl , put shredded cabbage and carrot . Now add the required amount of flour and salt and mix well. Make small balls out of it and deep fry in a kadhai until brown n crisp. Keep the Manchurian aside.
Take a frying pan and  pour oil in it , add ginger garlic paste , green chilli, and onion . Saute it for 5 mins until brown.
Add 1 cup water , salt , pepper n soya sauce. Boil it for 5-10 mins.
Make a paste of cornflour and water in a bowl.  Pour this paste in the pan. Now the sauce will thicken. Add Manchurian balls in it . Boil for 5 mins. Garnish it with finely chopped spring onions.

MAPLE BUTTERMILK GRILLED CHICKEN



Ingredients
2 cups buttermilk
2 green onions chopped
4 cloves garlic finely chopped
1/2 tsp pepper
1/4 tsp cinnamon powder
1/4 tsp chilli flakes
20 small bone-in chicken pieces
1/4 cup maple syrup

Method
In a bowl, combine buttermilk, onions, garlic, pepper, cinnamon  and chilli flakes .
Add chicken , marinate for 2 hours.(you can marinate chicken and refrigerate for 24 hours)
Remove chicken from marinade, discard marinade. Sprinke salt over it .
Place on greased grill  over medium heat, close lid and grill, turning occasionally, for about 30 mins.( your cooking time will vary according to the size of chicken)
Brush with maple syrup, and grill untill glossy  for 5 mins.
For garnish , cut a lime in half n grill it alongside the chicken .

FISH MOILEE



Fish Molee is a unique Kerala Fish Recipe which has coconut milk as the main ingredient. Unlike the traditional Kerala Style Fish curries, this recipe doesn’t use Tamarind and is not spicy. It is an excellent side dish for Appam, Bread or Roti.

Ingredients
Fish fillet like basa
2 onions chopped
2 ts ginger
2 ts garlic
5 green chillies
1/2 ts turmeric
11/2 ts pepper
1 tomato
1 cup coconut milk
salt
pepper as per taste
Method
Marinate fish with salt , pepper n turmeric for 1 hour.
Heat  a frying pan , put oilin it , fry the fish till half done, remove it aside.
In the same pan add onions , ginger garlic , green chilli, turmeric, pepper .
Add coconut milk  and tomato, lower the flame .
Add the fried fish and cook till fish is done. Add curry leaf and simmer for 1-2 mins.

 

Roast Salmon n Potato

Salmon
baby potatoes
salt
pepper
mustard sauce - heat a pan , put butter , 1 tb mustard, salt n pepper , parsley.
Preheat oven to 400 F. Take a pan , add oil , put potatoes, salt n pepper. Roast it for 10 mins .
Take salmon  and put salt n pepper .Pour 2 ts oil on it and bake for 25 mins alongwith potatoes
Pour mustard herb sauce on salmon.

 

Chilli rubbed Salmon

Salmon fillets
1 ts chilli powder
3/4 ts oregano
salt n pepper
Preheat oven 450F. Marinate salmon with above for 1 hour. Take a pan , put foil , place salmon in middle of foil and bake for 15 mins.


SALAD

Greens Salad

Balsamic vinegraitte - 1 tb balsamic vinegar, 1/3 cup olive oil, 2 tb sugar, 1 ts mustard, 1 garlic. mix all for vinegraitte
greens like spinach, aragula, lettuce., avacado, 1 ts pista.
greens like spicah , aagula, lettuce, 1 green apple, walnut.
greens with strawberry, almond.

 

Spinach Salad

1-2 cup spinach
1 egg
1/4 cup onion
1 avacado
strawberry or grape or pear
Vinegraitte - 1/3 cup olive oil, 2 tbs balsamic vinegar, 2 crushed garlic, 1 tb mustard, salt n pepper.


Red Cabbage and warm spinach Salad

1/2 cup grated red cabbage
2 cup spinach
Vinegraitte - 1 garlic, 1/2 ts mustard, 1/2 ts honey, 1 1/2 tn balsamic vinegar, 1/3 cup olive oil, salt n pepper.
heat a pan, add oil , add red cabbage and cook till tender. after its done add spinach, till wilt. Take a bowl mix cabbage n spinach with the dressing.

Stuffed baby eggplant


1 tbsp cumin powder
1 tbsp corainder powder
1 tsp garam masala
1 tsp amchoor
1 tsp chilli powder
8 baby eggplants
2 tsp olive oil
salt as per taste
Blend cumin, coriander, garam masala, amchoor, chilli powder and salt with 2 tbs water to make a thick paste.
Cut eggplants halfway through the middle, stuff above paste and let it stand for 20 mins.
Heat oil in skillet , place eggplants and keep turning occasionally, until sides are browned and eggplants are tender.

SMOOTHIES

Berry- Green Smoothie

bunch of beet tops
swiss chard leaf
2 collard leaf
1 cucumber
1/2 cup bluelerreis
Half a lemon
blend all the above and enjoy.


Super-green Smoothie

1 cucumber
2 celery
1 cup spinach
1 green apple
half lemon
blend all the above .

Green tea Smoothie

3 cup green grapes
2 cup spinach
green tea
1 avacodo
1 tb honey
blend all the above.


Tofu Smoothie

 2 cup mango
Half cup pinĂȘapple juice
silken tofu
1 ts lime zest
1 fourth cup lemon juice
blend all the above.

 

Pomegranate berry smoothie

2 cups mix berries
1 cup pomegranate juice
1 banana
cup water
blend all the above.


Orange flax smoothie

2 cup frozen peach
1 cup carrot juice
1 cup orange juice
2 tb ground flaxseed
1 tb ginger
blend all the above.

 

Banana oatmeal smoothie

1 banana
1 cup milk
half cup cooked oatmeal
1 tb vanilla protein powder
1 tb ground flaxseed
blend all the above.

SPICY CHICKEN CURRY


1 kg chicken
2 onion thinly sliced
1/2 cup curd
2tb ginger garlic paste
1 tb chilli powder
2 tsp garam masala powder
salt
Cut chicken into medium size pieces.
Take a bowl , put curd in it, ginger garlic paste, add chilli powder (according to taste) and garam masala. Marinate chicken with above for 3 hours.
Take a kadhai, fry sliced onions till brown. now add marinated chicken pieces and cook on low flame till done and   add coriander leaves.



 

 

Beet and Carrot Salad

1 Beetroot
2 small carrots
1 tsp cumin
1  tb vinegar
1 ts ginger
1 tb olive oil
Heat a pan roast cumin  , put in mixer alongwith ginger, grind it.  Then add olive oil and vinegar in it .
Boil beets and carrots till done .take a bowl , add carrots n beets , pour the above dressing on it. Add lettuce leaf.
