BAINGAN BHARTHA

Baingan Bhartha

1 big baingan
2 onions finely chopped
1 tbs cumin
2ts ginger paste
2 ts garlic paste
2-3 tbs tomato puree
1tbs dhania powder
1 tsp chili powder
2 tsp garam masala
salt

Make slits in brinjal with knife. Microwave baingan for 5 mins ( till baingan turns soft), let it stand for some time. Remove it and mash the baingan with skin on it.
Take a kadhai , pour some oil, add  cumin , let it splutter . Add onions sauté till soft, then add ginger garlic paste, fry it. Add tomato puree, dhania, chilli  powder (you can add more chilli powder if want too spicy) garam masala, add baingan .
 Then add 1 cup of water , put coriander leaves. Lower the flame and boil for 20 mins . Add lemon juice at the end.
