CHOCOLATE CAKE



Ingredients

2 cups all purpose flour
2 cups sugar
3/4 cup cocoa power
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 tsp espresso powder
1 cup milk,buttermilk,or coconut milk
1/2 cup vegetable oil, canola oil or melted coconut oil
2 large eggs
2 tsp vanilla extract
1 cup boiling water
frosting


Method

Preheat oven to 350 F.
Prepare cake pan by spraying with baking spray or buttering.
Add flour, sugar, cocoa, baking powdr, baking soda, salt, espresso powder to a large owl. Combine well all dry ingredients.
Add milk, oil, eggs and vanilla to flour mixture and mix together until well combined.
Add boiling water to cake batter until well combined.
Pour cake batter into pan and bake for 30-35 minutes, until a toothpick inserted in the center of cake comes out clean.
Remove from oven and allow it to cool .
Remove from pan and frost the cake.

CHEESECAKE


Ingredients

2 (8 oz) cream cheese (can use the less fat kind too)
2 eggs beaten
1 tsp vanilla
3/4 c. sugar
1 tbsp lemon juice
10-20 chocalate graham crackers
1/4 cup butter
 pinch cinnamon powder
topping of your choice


Method


Preheat oven to 350 degrees. 
Crush chocolate graham crackers, combined with a bit of melted butter and a dash of cinnamon and press into bottom of foil or cupcake liner.
Beat cream cheese, eggs, vanilla, sugar, and lemon juice. 
Pour batter into tins, bake 12-15 minutes. 
Let cool, and then refrigerate for a couple of hours. 
Garnish with your desired topping.

BREAKFAST BREAD PUDDING


Ingredients

6 cups Bread (cubed)
2 cups Milk
1/4 cup Butter
2 nos Eggs, slightly beaten
1/2 cup Sugar
1/2 tsp Cinnamon powder
1/4 tsp Salt
1/4 cup Raisins
1/4 cup Chocolate chips

Method

Heat oven to 350F.
Heat milk and butter over medium heat until butter is melted and milk is hot.
In a bowl, mix eggs, sugar, cinnamon and salt. Stir in bread cubes and raisins. Stir in milk mixture.
Pour into ungreased deep round pan.
Bake uncovered 40 to 45 minutes or until knife inserted comes out clean.
Serve warm drizzled with honey.
Add in chocolate chips and give a stir.

BANANA CHIA CAKE OR BREAD

Banana Chia Bread is moist and makes a great snack or quick breakfast.


Ingredients

1 1/2 cups flour
2 tsp baking powder
1/4 tsp salt
1 large egg at room temperature
2 tbsp whipped butter, softened
1/2 cup sugar or brown sugar
1/3 cups chia seeds
2 lasrge bananas, smashed
1/2 cup almond milk

Method

Preheat oven to 400 degrees and grease a medium loaf pan and set aside.
In a large bowl mix butter , egg, banana and sugar.
In a medium bowl add flour, salt baking powder and mix well.
Slowly add flour mixture and milk to wet ingredients, alternating until incorporated.
Fold in chia seeds, place batter in loaf pan or cake pan and place in oven for 60 minutes or until a tooth pick inserted in the middle comes out clean.

MULTIGRAIN BUN


Ingredients

2 cups whole wheat flour, plus more, as needed for kneading
1 cup oat flour
1 cup all purpose flour
2-1/4 teaspoons of active dry active yeast
2 teaspoons salt
1 cup lukewarm water
1 cup lukewarm milk
1/4 cup honey
1/2 cup olive oil
1 egg, beaten (optional - it just adds an additional softness to the recipe)
sesame seeds

Method

In a small mixing bowl,add in the lukewarm milk and water, the eggs (optional), the yeast, salt, olive oil and honey. Whisk all the ingredients together and keep it aside.
In the bowl of the Stand mixer with the dough hook attachment, Add the milk yeast mixture to the bowl of the stand mixer. Gradually add in the flours one at a time
Knead using the dough hook of the Stand Mixer until all the ingredients are well combined. Add little more flour as more as needed to make an elastic dough. This process takes less than two minutes in the Stand Mixer .If using hands to knead, knead well until all the ingredients have come together following the same process above.
Place dough in greased oiled bowl and cover with cling wrap or a lid. Allow the dinner roll dough to rise until doubled for about couple of hours.
Once the dough has risen,punch down dough and form dough into 1-inch balls and place the dough on a greased baking sheet for about 1/2 an hour more until it rises. Cover the baking sheet with a towel.
Preheat oven to 200 C while the dough is rising.
Once the dough has risen, brush the dough with olive oil and sprinkle sesame seeds on top of the dough.
Bake the Multigrain Dinner Rolls in the preheated oven for 10 to 15 minutes, until golden brown and the crust looks crisp and has risen. When baking you will notice that the dough will crack to expand showing the fluffiness inside the dough.
Remove from the oven and serve these Healthy Multigrain Dinner Rolls along with soup and salad for dinner.

EGGLESS MANGO CAKE


Ingredients

1 cup All purpose flour
1 tsp + 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 tsp cardamom powder
1 tsp cinnamon powder
1 cup + 1 tbsp mango pulp or puree
1 tbsp milk
1/4 cup butter/canola oil/coconut oil
1/4 cup brown sugar or granulated sugar ( adjust sugar according to the sweetness of mango)
1/4 tsp vanilla extract
PAM cooking spray to grease ( you can even grease with butter/oil)


Method

Preheat oven to 350 degree F
Sieve flour salt, baking powder, baking soda well. Add cinnamon powder cardamom powder.
Add the mango pulp , vanilla, sugar, butter and milk to  bowl, mix well.
Add wet ingredients to dry ingredients and mix well with a whisk until you have a smooth batter.
Grease baking tray, pour batter and bake for about 30-40 minutes.

TERIYAKI CHICKEN WING












INGREDIENTS

3 lbs chicken wings , tips removed 
1 cup soya sauce
2/3 cup water
1 cup brown sugar
2 tbsp dry mustard 
1 tbsp grated ginger
3 garlic cloves, minced


Method


Place chicken wings in a large shallow baking pan.
Bring the remaining ingredients to a boil in a saucepan.
Pour marinade over wings and place in 350 degree oven for 30-45 minutes.
Remove from oven and place in a pan. Turn oven to broil and brown until crispy, turning a couple of times.

BAKED POTATOES WITH LEMON VINAIGRETTE


Ingredients
4 large russet potatoes cut lengthwise into wedges
4 tbsp lemon juice
2 cloves garlic
1 shallot chopped
4 tbsp olive oil
2 tsp dried oregano
salt as per taste
1 tbsp pepper

Method
Preheat oven to 425 F
Put olive oil , lemon juice, shallots, garlic in a blender . Puree until smooth .
Add salt and pepper.
Toss the potatoes with 1/2 of vinaigrette in a large bowl and spread in a single layer on a rimmed baking sheet.
Roast the potatoes until tender and golden , turning occasionally 30 - 40 mins ( if you cut the wedges thin then it will take less time to bake)
Transfer the baked potatoes to a platter and drizzle remaining vinaigrette. Season with salt.

Note
You can use frozen french fries for this recipe. Put the frozen french fries on a baking sheet and pour the vinaigrette on it and mix well. Bake it at 425 F until it is golden brown . This is much easier.

PIZZA DOUGH


Ingredients
1 cup lukewarm water
1 tsp honey
2 1/2 tsp yeast
3 cup flour
salt 1 tsp
2 tbsp extra virgin olive oil (EVOO)

Method
Mix water and honey in a small bowl. Add yeast and stir well.
Keep it aside for 5 mins.
Take a big bowl, add flour, salt and  EVOO. Mix well.
The dough should clear the sides of the bowl but stick to the bottom of the bowl. If the dough is too wet and doesn't come off the sides of the bowl, sprinkle in some more flour just until it clears the sides.
Now take a big bowl and pour some olive oil in it. Place the dough in it and coat with the oil in it. Cover with plastic wrap and keep it aside for about half an hour.
After half an hour the dough will rise and be double in quantity.
Now take the required amount of pizza dough and make your favourite pizza.

MAC-N-CHEESE


Ingredients
1 packet macaroni pasta
2 tsp olive oil
1 stick butter
3 cloves garlic grated
salt as per taste
1 tsp pepper powder
3 tbsp. flour
2 cup milk
1 tsp paprika
3 cups cheddar cheese grated
hot sauce as per taste

Method         
In a large pot of boiling, salted water, cook the pasta until al dente; drain it.                       
Meanwhile, in large saucepan, add olive oil and butter  over low heat.
Add grated garlic and saute it. Add salt and pepper.
Now lower the flame and add flour , cook the flour and be careful not to burn it.
Add paprika (adding this will enhance the colour of macncheese).Whisk in  2 cups of milk and hot sauce. Thicken the sauce for 5 mins and stir in cheese .season with salt and pepper . Preheat broiler to 350 F
Put pasta in this mixture and stir it well
Pour this pasta an cheese mixture in a baking dish. Add some more cheese .
Put in under a broiler for 3 mins..

EGGLESS DATE CAKE


My kids don't like dates. I saw this recipe and tried it. The cake looks like chocolate cake and my kids loved it.

Ingredients
1 cup Flour
18 dates pitted
3/4 cup milk
3/4 cup sugar
1/2 cup oil
1 tsp baking soda
1 tsp walnut finely chopped

Method
Warm the milk and soak the dates in it for 10-15 minutes.
Preheat the oven to 180C/360F for 10-15 minutes. Grease the baking tray with butter and dust it with flour. Keep it aside.
In a mixing bowl, mix oil, milk(1/2 cup and remaining 1/4 cup I used to grind the dates) and sugar.
Make a paste of the dates using a blender. I used only 1/4 of milk for easy grinding. Add this ground dates to the wet ingredients. Mix well till you get smooth thin batter.
Add the flour mixture( flour and baking soda) to it and gently fold it till all the ingredients are properly mixed.
Add roughly chopped walnuts to the batter. Gently fold it.
Pour this batter to the pan and bake it for 30-35 minutes. After 30 minutes, check it with toothpick  by inserting it into the center of the cake. It should come out clean.
The baking time might vary from oven to oven.
Cool the cake for 5-10 minutes and transfer it to wire rack to cool completely.
Cut them into slices and enjoy.
